These Stuffed Bagel Bites are made with a fool-proof 4-ingredient dough and are the perfect addition to any busy morning! No yeast, no waiting required.

hand holing stuffed bagel bite with everything but the bagel seasoning

Remember those bantam bagels from Starbucks everyone loved?? Now you can make them at home with just a handful of ingredients! These stuffed bagel bites taste just like the discontinued classic and are so easy to make. Super fluffy and loaded with flavor, they're the perfect on-the-go breakfast!

If you're anything like me, you don't have time for complicated recipes that require a lot of patience.. or yeast. Just like my protein cinnamon rolls, this recipe uses my fool-proof Greek yogurt dough to make a lightened up version of traditional bagels that are insanely delicious and packed with protein.

    Ingredients

ingredients for stuffed bagel bites - a bowl of flour, everything but the bagel seasoning, cream cheese, and yogurt
    • Greek yogurt - Non-fat Greek yogurt will give you the best texture for this dough. You can also use low-fat cottage cheese.
    • Flour - This recipe combines all-purpose flour with baking powder and salt to make the dough rise. *If using self-rising flour do NOT add baking powder or salt.
    • Baking powder + kosher salt - omit if using self-rising four
    • Cream cheese - Regular block cream cheese works the best!
    • Egg yolk - These bagels need an egg wash before baking to help them brown and make the toppings stick.
    • Everything but the bagel seasoning - One of my essential TJ's seasonings, but you can find it at almost any grocery store!

    Instructions

    hands flattening greek yogurt dough

Whisk together flour, baking powder, and salt. Add greek yogurt and mix until dough begins to form. Divide into 8 equal balls.

hands folding dough over cream cheese

Flatten each one into circles, fill with ½ tablespoon cream cheese.

Cover the dough well and roll into a ball. Place on a baking sheet lined with parchment paper.

pastry brush brushing egg wash onto bagel dough

Top with egg wash and sprinkle seasoning. Bake at 375 F for 20 minutes or air fryer at 325F for 12 min. Let them cool slightly and serve!

Pro-tip: Be sure to use the right yogurt and drain any excess liquid. I've had the best results with Trader Joe's non-fat Greek yogurt (no draining required!), Stonyfield and Chobani.

    Substitutions

    • To make vegan - You can easily replace the Greek yogurt with coconut yogurt and use dairy free cream cheese for the frosting!
    • Gluten-free - Substitute all purpose flour with whole wheat and a 1:1 gluten-free flours if needed.

If you're looking for more gluten-free breakfast options, try these: strawberry banana baked oatmeal cups, over hard eggs, overnight oats with water.

    Variations

Want to make these stuffed bagel bites even MORE delicious? Look no further!

    • Use a flavored cream cheese, like blueberry or strawberry.
    • Mix fresh scallions into your cream cheese.
    • Drizzle with hot honey.
    • Add chopped raisins to the cream cheese filling and finish with a sprinkle of cinnamon on top.
    • Place a small spoonful of chia seed jam and cream cheese in the center for the filling!

    Storage

Fresh is definitely best with these bagels, BUT they can absolutely be stored in the fridge for 3-4 days.

Place any leftover bites in a zipped plastic bag and freeze for up to 1 month. To reheat, thaw completely, and place in the oven at 375 degrees for 10-15 minutes.

    Top tip

Greek yogurt dough can be finicky at first. Be sure to use the right yogurt and drain any excess liquid. I've had the best results with Trader Joe's non-fat Greek yogurt (no draining required!), Stonyfield and Chobani. If you feel the dough is still too sticky, add more flour! You want the dough to be soft without sticking to your hands.

Do you think these would handle being made the night before, refrigerated, then baked in the morning?

      Thanks!

Absolutely! Just be sure to wrap them or store in an air tight container or the dough will dry out.
