It took me a LONG time to come around to the idea of eating tofu. Something about the texture and bland taste was off-putting, but the key to making it delicious is using an easy tofu marinade!

 

You’ll have a flavorful, protein packed meal in no time with these simple tips.

 

Absorb the Flavor

Tofu soaks up flavor like a sponge. For something that literally tastes like nothing, a simple marinade can turn tofu from drab to fab in 15 minutes.

 
Key ingredients for a great marinade:
  • Acid: lemon, lime, vinegars
  • Salt: flavor enhancer 
  • Oil: I’ve had the best results with extra-virgin olive oil, but a neutral oil like, canola oil, is good too!
  • Sugar: brown sugar, sugar, maple syrup, honey
  • Spice: dried or fresh herbs, spices, or peppers

Make it extra-firm

Extra-firm tofu is a great choice for marinating and cooking. It’s firm, yet porous enough to soak up a lot of flavors. You will need to press it before marinating (no you don’t need a tofu press!), and let it soak for at least 15 minutes before cooking.

 
Pressing tofu: 
  • Drain the liquid from the package and give it a little squeeze. 
  • Place tofu between two dish towels.
  • Press the tofu using a tofu press or flat, heavy objects (books, cutting boards, plates).
  • Pat it dry and you’re ready to go!

Ingredients

  • 1 block extra-firm tofu

Cilantro Lime:

  • 2 tbsp olive oil
  • 1/2 lime, juiced
  • 1 tbsp honey
  • 1/2 cup cilantro, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt

Fajita:

  • 2 tbsp extra virgin olive oil
  • 1/2 lime, juiced
  • 1 tbsp maple syrup or honey
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cumin
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1-2 tbsp chili powder

Honey Balsamic:

  • 2 tbsp extra-virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt
  • 1/2 tbsp lemon juice (optional)

Instructions

  • Prep the tofu: press the tofu and cut it into your desired shapes. I like to cube mine into bite sized pieces but really anything works! Set side.
  • Make the marinade: add all of the ingredients (minus the tofu) and whisk until fully combined. You can whisk in a bowl or directly in the dish/ bag you plan to marinate the tofu in. A plastic baggie, stasher bag, or really any kind of shallow resealable container works well.
  • Add the tofu: add in your tofu pieces and let marinate for at least 15 minutes or even overnight.
  • Cook as desired: grill, bake, or pan fry until you get a delicious crispy tofu!
