Ingredients
- 1-2 sweet potatoes
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Using a sharp knife, or mandolin, cut the sweet potato into ¼-inch round slices. Toss with olive oil and place onto the baking tray.
- Bake in the oven for 15-20 minutes or until the sweet potatoes are golden brown and can easily be pierced with a fork. Top with desired toppings and enjoy!
