Ingredients

  • 1-2 sweet potatoes
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 400F. Line a baking sheet with parchment paper.
  • Using a sharp knife, or mandolin, cut the sweet potato into 1/4-inch round slices. Toss with olive oil and place onto the baking tray.
  • Bake in the oven for 15-20 minutes or until the sweet potatoes are golden brown and can easily be pierced with a fork. Top with desired toppings and enjoy!
