Warning: Personal Post Ahead
Major apologies for the radio silence these past few months, but we sure have been busy! Today's post is a deep dive into some major life changes and updates on the future of Kelsey & Cooper's Kitchen.
If you feel an explanation is needed for the abrupt abandonment and could use some cute dog photos.. keep reading. If not, I totally understand, you came for the recipes. Feel free to skip this post and I promise we'll get back on track faster than Cooper can chase a frisbee.
Life Changes
They say the three most stressful moments in your life are getting married, buying a home, and having a baby. Well, you know what's even more stressful? Having all three happen in a span of five months.
Yup! That's right, I gave up my fake Italian last name to officially become Kelsey Sackmann, MS, RD. Oh, and let's not forget I'm about to be a MOM... talk about life changing!

June: Ohhhh Baby!
Imagine finding out you're pregnant the same day you quit your job and three days after accepting a new job offer. Your mind starts racing and you bypass the excitement about bringing life into the world.
Don't get me wrong, the thought of becoming a mom was exhilarating, but the timing wasn't ideal. I struggled to wrap my head around it without worrying about the future. Marrying my best friend of six years and starting a family was always the plan, but it was quickly becoming reality.
August: Throwing Spaghetti at the Wall
Luckily, I had an incredible support system to ease my mind and remind me this was an exciting time! I needed to enjoy these moments and they'd be there for me, every step of the way.
When Tommy and I decided we were tired of waiting and it was time to get married, sooner rather than later (like two weeks before his brother was supposed to get married), it seemed a little crazy... we didn't know how our families would respond.
So, like throwing spaghetti at the wall to see if it sticks, we told them our plan and to our surprise, everyone was on board. They sprung into action and in just four short weeks, we had our dream wedding. We were officially, The Sackmanns.

If you're like me and prefer to keep things simple... I HIGHLY recommend a casual, backyard wedding with your closest friends and family. Nothing fancy, just love.
November: Finally Home
After soaking up every moment of being newlyweds, it was time to focus on the baby. And that's when it hit me... we needed more space. Being stuck in a condo with a newborn, a dog with no concept of personal space, and a video game loving husband sounded fun and all, but definitely wasn't ideal. Plus, Cooper really deserved his own backyard and a big, fancy kitchen after all these life changes.
The hunt was on! We spent three months searching, arguing, disagreeing, and compromising - only to find the perfect house. In the end, all the stress was worth it. We learned a lot about each other, especially that we make a kick ass team, and it was the right move for our family.
So yea, the last few months have been stressful, overwhelming, and a total surprise, but they've also been AMAZING. I wouldn't change it for the world.

January: The Next Chapter
We can't apologize enough for taking off these past few months and are incredibly thankful for those who stuck with us! We can't wait to start this next chapter and bring you along for the ride.
The best thing to come out of this adventure was 100% our new kitchen. Cooper and I have been cooking up a storm to get back to doing what we do best - helping you!
