    Bell Pepper Nachos

    These nachos are perfect for game day, party appetizers, or a mid-day snack! We made a vegetarian version, but you can always add lean ground beef or turkey.

    Bell Pepper Nachos

    Colorful, crunchy, delicious twist on your favorite snack. Loaded with everything you'd hope for on nachos using only four ingredients! The crisp bell peppers make it a perfect football Sunday appetizer or weeknight meal.

    Ingredients

    • 3 bell peppers (red, orange, or yellow)
    • 1 5 oz can low sodium black beans
    • 1 jar chunky salsa
    • 1 teaspoon ground cumin
    • Salt & pepper to taste
    • ½ cup shredded reduced fat cheddar cheese
    • Lime juice, optional

    Instructions

    • Preheat the oven to 425°F. 
    • Core the stem from the peppers. Slice it in half, and then slice each half into 3 equal parts to make “chips”. (You can also use halved mini sweet peppers). 
    • Lay them on a baking sheet with insides facing up. Fill with black beans and salsa. 
    • Squeeze on some lime juice (optional) and lightly sprinkle your seasoning. Add a layer of cheese and bake until melted, about 10 minutes.
    • Serve immediately and enjoy!
