Chocolate Dipped Clementines are a perfect snack with just the right balance of citrus and sweet. They're bursting with vitamin C and antioxidants - the perfect immune boosting combo!
Line a baking sheet with parchment paper. Peel and segment each clementine. Set aside.
In a microwave safe bowl, add chocolate and 1 teaspoon of coconut oil. Microwave for 30 seconds, remove and stir. Continue microwaving in 10-15 second increments, stirring in between until completely melted.
Working in small batches, dip ¼-1/2 of each clementine in chocolate and transfer to parchment-lined sheet. Add a sprinkle of sea salt, crushed pistachios, etc. before hardening.
Transfer baking sheet to the refrigerator for 10 minutes. Once chocolate hardens, serve at room temperature.
