Bell Pepper Nachos
Colorful, crunchy, delicious twist on your favorite snack. Loaded with everything you'd hope for on nachos using only four ingredients! The crisp bell peppers make it a perfect football Sunday appetizer or weeknight meal.
bell peppers (red, orange, or yellow)
1 5 oz
low sodium black beans
Salt & pepper to taste
shredded reduced fat cheddar cheese
Preheat the oven to 425°F.
Core the stem from the peppers. Slice it in half, and then slice each half into 3 equal parts to make “chips”. (You can also use halved mini sweet peppers).
Lay them on a baking sheet with insides facing up. Fill with black beans and salsa.
Squeeze on some lime juice (optional) and lightly sprinkle your seasoning. Add a layer of cheese and bake until melted, about 10 minutes.
Serve immediately and enjoy!
