Baked oatmeal cups are perfect to meal prep for an easy grab & go breakfast. They are very similar to muffins and made with the same healthy ingredients you’d put in a bowl of oatmeal. Top with your favorite flavors!
2 ½cupsrolled oats (make sue they're gluten-free if needed)
1tablespoonground cinnamon
1teaspoonbaking powder
¼teaspoonsalt
1cupstrawberries, diced
⅓cupmini chocolate chips*
Instructions
Preheat oven to 350 and line a muffin tin.
In a large bowl mix together mashed banana, eggs, milk, butter, honey, and vanilla until mostly smooth.
Add in rolled oats, baking powder, cinnamon and salt until well combined. Gently fold in strawberries and chocolate chips.
Pour mixture into prepared muffin tins and bake for 30-35 minutes until golden brown on top or a toothpick comes out clean.
