Raspberry chia seed jam is the perfect alternative to store-bought jam. It's super quick & easy to make, thickened with chia seeds (instead of sugar), and totally delicious.
Heat raspberries in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. Use a wooden spoon or fork to mash the fruit.
Remove from heat, mix in honey and vanilla extract. Add chia seeds and stir to combine. Let stand for 5 minutes or it begins to thicken.
Use immediately or transfer to a mason jar and keep refrigerated.
Notes
HONEY:Since raspberries can be tart, slowly add additional honey until reaching desired taste.
